Pumpkin, lentil and tuna patties

Serves: 3 – 4 

 

Ingredients:

  • 1 x 400g tin cooked lentils

  • 2 cups of roasted pumpkin

  • 2 x 185g tins of tuna or salmon 

  • 1/4 cup fresh pasley

  • 1/4 cup fresh basil 

  • 2 egg

  • 3 Tbsp almond meal

  • 1/4 cup nutritional yeast or parmesan cheese

  • 1 tsp paprika 

  • 1 clove garlic 

  • 1 onion 

Procedure:

  1. Preheat oven to 180 degrees celsius

  2. Cut pumpkin into small cubes and bake or alternatively you can grate the pumpkin and put it into the pattie mixture 

  3. In a large mixing bowl add tuna pumpkin and lentils and mash together with a folk

  4. Add eggs, nutritional yeast, herbs and spices, almond meal and diced onion into the mixture and mix well 

  5. Spoon large desert spoon fulls on to a baking tray and bake for 45 minutes on 160 degrees celsius or until cooked
